Wierd Cooling

I'm not entirely sure that it is a problem, but I have a '89 ST184 Celica SX with a 2.2i.
At the start of the year it was overheating and I worked out it was a dodge radiator. So in went an after market one. Bigger tubes, don't block as easy etc. Now its winter and mighty cold at that Just north of ballarat and I'm noticing that its running very cold indeed. Sitting on about 130, the temp gauge keeps going down to the cold Line. I pull over, check everything, radiator feels cool, motor feels cool (warm to touch, but not 50 degrees).
This is the first car i've owned/driven that fluctuates this much in temperature. All the other cars usually get a bit warmer on the hot days, little bit cooler on the cold days, but not quite like this.
I was thinking maybe a dodgy temp sender, but the motor doesn't feel hot, thermo fan not running. Heater wasn't on (currently by passed as it leaks), air con running to demist the windscreen (me wearing a beanie and a scarf, looking like an eskimo to keep warm). Its got me stumped.
I did a search, but i could only find overheating problems.
