alternator - where is the sensor that tells it how much to put out?

I tried three different alternators today, and they all only were putting out 11-12 volts.
I am wondering if whatever it is that tells them how much power to put out is malfunctioning or some extra resistance somewhere in the wires.
Either that or 3 dud alternators
