I haven't had too much experience with the TT, but I have converted my MZ20 Soarer from Auto to manual(Supra 5 speed turbo). Had a mate with all the relevent part numbers so was able to sort through them and pick out the necessary items which we imported from Japan.
Clutch pedal assembly,fluid reservoir, hydraulic lines, cylinder etc. plus all the interior trim for the gear shifter arrangement.
You will also need a manual flywheel. I had mine made up as a lightened aluminium unit using a standard manual ring gear (this is a race car though). Some changes may be needed in the ECU department, I run a Link engine management so I can't help you on that score. It was some time ago so I can't recall the costs,but I'd say the parts from Japan were probably around $800, the actual conversion was done by AVO in Melbourne, I don't remember the costs. Flywheel cost about $700, but you may be able to buy one with the box.
You might also consider a race type pedal box arrangement. Theres a few on the market (Tilton etc.), might be a fiddly job in your car but would allow you some degree of brake bias adjustment if you ever required it. (I wish I'd done that now)
