If you have a bare block, get it hot tanked ($30-40). After hot tanking, rinse the block with hot soapy water, dry the bores immediately and apply some WD40 or CRC to prevent rusting.

If you have bare head, have it washed in a sodium bicarbonate bath. Do not get the head bead blasted - the pesky little beads will end up in the oil galleries and end up somewhere you don't want them when you reassemble the engine.

I would be wary of splashing water and degreaser around a disassembled but intact block or head. Who knows where the grit might end up, only to do untold damage when you reassemble the motor.
