Yes, a 1UZ will fit, it's been done before. Just make sure you get a front-sump type engine and it will be all good.
Manual conversion is easy; it's really no harder than doing it in an old Celica (I've done both). You can use parts from RA6x Celicas (eg pedals, clutch hydraulics etc) so they're easy to get.
