Hey Chris
Can you put a manual oil pressure guage on it instead of the light so you can see what's really happening?
I know this may sound stupid,& you've probably checked, but is the dipstick seating too far into the tube (damaged top seat on the stick), therefore showing a higher level than it really has? Going up a hill under load/acceleration is the perfect opportunity for surge with a low oil level in a 3TG sump....
