Bleeding your brakes won't increase the performance of the braking system, unless you have LOTS of air in the system and the pedal is going all the way to the floor! Definitely bleed the brakes anyway, there's nothing worse than a spongy brake pedal.
An MA61 will pull up quite well with good pads and rotors. Pads make a huge difference, so get good ones. Decent rotors will also help - note that you can get DBA slotted rotors for about $250 (front pair).
If this still isn't good enough for you, it's time for a brake conversion. This means lots of custom fabrication work and lots of $$$. I don't know of anyone who has actually done a serious brake upgrade on an MA61, which is a shame since I need to upgrade my brakes in the near future... oh well, I'll have to do it the hard way again!
