My 5me was doing 3000rpm @ 110km/hr in a w58 5th gear with a 3.9 ratio. Was too high imo. Should my 302 do the same revs providing i leave my box/ driveline the same?

You are aware cast iron v8's into ma61's have some serious heat issues? i suggest you track down v8supra (i think that was his name on here) he has an ma61 with a holden v8 and had issues with stuff melting
i would also think you may want a 2.something diff for that engine in an ma61 due to the fact you will need a few jerry cans straped to the back just to make it between servos, also you will be rowing thru gears like a lancer driver rice boy in the wet and the noise of all the push rods and stuff at 3000rpm will be deafining (ok last one im streching it a little)
