Yes you could do it. It would require custom fabrication of a crossmember to go across from one side of the sub frame to the other. It would bolt up to where the steering box and the idler arm mount. You would then bolt the rack to that.
A series of questions then arise. Which rack? How do I connect it to the std Mk2 steering column? Where do I place the rack such that I do not increase bump steer? What about Ackerman angles?
Another question emerges - why exactly do I need to spend an exorbitant amount of money just so I have a bit more clearance around my extractors? If you are concerned about heat, then use heat wrap or get them ceramic coated.
If you actually want more direct steering, then perhaps it is worth it, IF it is done properly.
