thats not a dodgy way of doing it... thats exactly how youd do it if all you wanted to do was to replace the VSS's.

as for replacing the guides? youd be amazed at the durability of the toyota guides, and the acceptable wear limits the guides offer. eg: the 7m head im using has over 240000km on it, and the original guides have less than half the wear as speccd in the tolerances. the tolerances are VERY generous. unless something has gone rather astray in the engine, or if you had suspicions a guide was worn, id not bother.
