Don't expect much (if any) improvement in fuel economy. I've owned a 5M-E, 5M-GE and 6M-GE, and they all used lots of fuel.
I agree with GT's sentiments, a more modern engine is the way to go. Sure it will cost you more in the short term, but the advantages can't be ignored - it will use way less fuel, it will be more reliable (ie it's not 20 years old) and of course it will have much more power.
I did a 6M conversion 4 years ago and it worked out really good for me, but back then 6M's were cheap and easy to find while 2JZ's were nearly impossible to find and ludicrously expensive. It's completely the opposite today - 6M's are difficult to find in decent condition, and most of them need a rebuild anyway ($$$). 2JZ-GE's on the other hand are ridiculously cheap for what you get and being a much newer engine they're unlikely to need a rebuild.
If I wanted a cheap upgrade from a 5M-E today, I know what I'd be doing - and it wouldn't be another M engine.
