The drums do self adjust originally, although lots of them end up getting put together with bits missing so it doesn't work 
Drum brakes suck.... Well, they DO, but.. Are you going to do something about those laughable front brakes first? If not, there's really not a lot to be gained by sticking on rear discs... and chances are the handbrake won't work nearly as well when you're done
