I don't know if this will help anyone but i thought it might be useful.
Information recieved from a mechanic who couldn't be bothered doing it himself, kudos to him.
After measuring the thicknesses of the pads and determining how much needs to be ground down...
Grab yourself some 400 grit wet dry sand paper and a really flat surface (I used a glass door from our entertainment unit) and sit with the shim making nice little figure eight patterns on the paper. You could wet the paper if you want, but i didn't notice any difference.
it takes about 5-10 minutes of figure eighting to ground the shim down about 0.04 millimetres. Just apply a steady even pressure and try not to ground your thumb and forefinger down by equivalent amounts if you can avoid it.
When you get close to the amount you want to ground, switch to 1000 grit just to remove the scratches.
to do all eight for me (2 of which were out by about 0.1mm) took about an hour and a half.
but all measurements are now within tolerances, so thanks again guys.
now is there a way to know what hole i should put the pin's in for the camshafts. if i rotate the engine both cams seem to be a litle before top dead centre (small scooch of an amount though). the intake is set to full advance setting (the right most hole?) and the exhaust is set to one before this.
