maybe fell asleep, drifted over to the embankment, woke up, turned hard, got it sideways, wheels dug into a hard spot/rock, and flipped it. only explanation I can think of.
that rivals a street near my place. 50 zone, 4 way intersection. in the middle of the intersection was a hatch on it's roof, no other cars involved. takes skill I guess 
also reminds me of a guy I drove past near epping mobil. his engine bay was smoking, the guy was looking a little confused & worried. suddenly flames start licking out of the wheel arches, and his tyres catch on fire. we pulled over to watch the show
(firies put it out with no explosion, but the pools of molten rubber were cool)
