ABSOLUTE CHEAPEST easiest corolla to work on would have to be the KE70 or AE71 corolla.
These were available in both sedan and wagon, with the sedan being far more common and having a better rear end setup.
Basic specs are the same for each model, but here are the main differences:
# KE70 = 1.3L 4K-C motor. 4sp manual or 3 auto.
# AE71 = 1.6L 4A-C motor. 5sp T50 manual or 3 auto.
Both use crappy borg warner (bog whiner/warmer) diff's and coil sprung rear ends (in the sedans, the wagons have leaf spring rears). The diff is simple to upgrade later on though.
Parts are the cheapest and most readily available of all the corollas just about - with my last visit to Pick'n'payless yeilding a count of at least 8 to pick from there for parts.
For upgrading its hard to beat this model. Installing a 4a-ge is a simple bolt in matter, with only EFI hassles to worry about. If you want to see just how easy it all is, have a look at my thread for my AE71:

For a first car its pretty choice really. Cheap, simple, repairable, not too old, readily available, easily modified.
Sure there are no "bodykits" and shite - but for a first car you really dont want that stuff anyway! Aftermarket "goodies" for this car dont exist - except for the 'do-it-yourself' variety [read - wreckers]
