as long as the cooling system is keeping its pressure and holding water then i wouldn't be too concerned.
Im not sure what temp gauge you are using, the factory digital jobbie in the Limited models sit dead on the middle whether its friggin artic or if its a sweltering hot day. Mine on the track thrashing the absolute ring off it and it stays pretty much dead in the middle
Toyota dont need gauges, they need 3 lights... blue for cold, green for good, red for 'time for a tow'.
My CRX on the other hand which im pretty sure has a tiny crack in the head will sit on a constant temp, then when you stop at lights it gets warmer like to 3/4 then when i drive off it goes back to 1/2. The bloodying thing is pressurising the cooling system like wild, pumping out water through the over flow and the hoses swell to like twice their size... BUT inside as far as i could tell it was running fine, its only when i got home and went to check under bonnet i realised what it was doing..
So yeah, if the cooling system holds pressure, keeps its water then maybe just check the flow isnt being restricted to the radiator too badly, maybe a nice big thermo in front of it.
