The Circuit Opening Relay has two functions. 1) Shuts fuel when the engine stops (for safety) and, as Pete mentioned, 2) holds the contacts closed for a few seconds to pressurise the fuel rail. The short answer is that the ecu will still operate without the Fc signal if you choose to use a standard relay instead of the COR.
