sounds like coolant may have split down into the spark plug holes? And shorting out the spark?
Pull off the spark leads and grab an air compressor and blow out the moisture.
The other main area to check is the distributer. Take off the spark leads, detach the distributer cap and make sure there is no moisture in there.
Running rich usually indicates fuel, but no spark. So check the above first, before diving in and pulling out injector connectors etc.
EDIT: Oh, there is no accurate way to adjust the air/fuel mixtures on a stock 3SGE. You can play with the AFM slightly, by tensioning the internal spring etc, but its not the best way to go about tuning the car. Your O2 sensor could have been damaged as well.. that will be worth a look if the above doesn't help
