Something is wrong there. There is no way, IMHO, that these modifications should be able to get you an AFR like that unless something is wrong.
Unfortunately I never dyno'd my car, however the times/MPH I got suggest I had a much higher power output... but with only a 3" exhaust and a $25 boost controller! While your car 'runs' (can scarcely call it that) after these modifications, I would suggest that they have basically been for naught as the car appears to have the same power as mine did with 10 minutes fiddling and less than a grand spent on modifications.
* What kind of fuel pressure are you now running? You have basically made no changes apart from fuel pump and pressure regulator, so your results point to the fact that the fuel pressure is set way way way too high.
* Are you SURE there's not an air leak somewhere after your fiddling? I would suggest that you go around and check all your piping - particularly the parts you have taken off during your working and also the downpipe off the compressor housing. It's a prick to get to, but I went through two of these and they made the car run very rich, even with just a small split in it (could not hear leak, didnt know what was wrong!)... and then once it really split apart after a few days the noise was incredible and the car barely moved for all the fuel it was spitting out.
* I am pretty sure it came from GT, but are you also certain that the AFM is a 1UZFE one?
Oh, and noone has ever said that the 440cc injectors are too small. 440cc injectors should be good for over 500hp with a correct tune. The reason that they are recommended in this situation is that the increase in size of the air flow meter is supposed to be balanced out with the increase in injector size.. that way the computer doesn't even know you've done anything.
If you go for an aftermarket ECU then your stock injectors will be fine. I only agree with one thing you said - there is no point running over 14psi on this turbo... however I will point out that I believe you will find that your data is flawed because you are running (as Norbie suggested) the standard intercooler and piping combined with absurd AFRs that will increase combustion temperatures horribly. If you can get a CT26 to hold a solid 14psi then my maths suggest that you should have no problems making 300hp at the engine with a sane state of tune.
A hiflow is a good idea and the 7M will respond very well to a more suitable trim (from my experience a 57mm wheel is heaps) and net you up around 400hp if tuned well.

Something is wrong in your situation so I do not believe the upgrade has worked as expected... I would NOT recommend that anyone base their modification path upon this idea.
I hope you have reverted the car back to standard and have changed your oil... otherwise expect to be pulling the engine out for a rebuild soon. AFRs like that will absolutely positively destroy your engine.
This is why I will never let someone else work on my car as they may be applying flawed experiences or principles.
