Mate i've done this plenty of times.. If you go to auto one or somewhere they sell thermo fan switches. You need to tap it into the water supply somewhere. On my car I had a sensor that wasn't being used around the thermo stat and put it there. Other times i've had a threaded nut welded to the radiator to tap it into.
Anyhows.. They are around $40 and you can pic the on/off temp. I got one that switches on at 85 deg and off at 80 deg. It just had 1 terminal on it that i've got wired up to earth a relay for the fan.
Easy and neat! So much better than those crappy davies craig devices.
