I would recommend against the 3" system, due to the drone they create on small capacity motors. I have a mandrel bent 3" system on my 3TGTE and only run one stainless steel Dynomax Striaght Through Muffler at the rear - the drone it creates is enough to thank God for trips under one hour. i have been told while going through the rev range it sounds excellent, however from in the car it's very loud!
I have also used the Lukey glass packed mufflers on a V8 ute I have (these are aluminsed not the stainless items - but basically the same muffler), and found them very trumpety. At first I didn't like the noise, but have grown used to it, and wouldn't bother changing it. I don't feel it is a legal note, however it can be hidden by accelerator pressure. This system a twin 2.25" setup with offset glass pack mufflers, on a 5L V8.
My recommendation based on my experience is, stay with the 2.5" system, regardless of what type of muffler you use. Aside form extra noise (which I feel you also want to address), there will be now effective gain from the extra displacement of a 3" system.
