If you blew the headgasket between the combustion chamber and a coolant passage, you'll end up with water in the combustion chamber and thus steam out the tailpipe. If this is happening a compression check will confirm it (ie lower compression on the cylinder affected). You can also get your coolant checked for traces of combustion gases, which is the biggest giveaway.
