Without turning this into a sloggin match.
You say you laugh at people who buy the flashing lights. then say pioneer have the best features. Look at pioneers top o the range units, with their useless 'pretty' displays. Then look at an alpine, with no pictures! Nothing to get distracted by. Simple text lines.
How do you pause the radio at high volumes? 
"A dial is no advantage over buttons ever." when was the last time you had the volume at 30 and needed to get it down to a very quiet level in a hurry? Not possible with buttons. Its a damn obvious advantage that a rotary dial has the ability to lower volume much quicker than buttons. Especially speed sensitive ones.
You laugh at people who don't buy a unit without a mute or attn button? Maybe you don't see the practical side of purchases. Or maybe you don't listen to music very loud (not that there is anything wrong with that)
As for only two things to consider when buying a head unit - thats even more laughable. Why would a drive who is not intending to run amps to power speakers give two hoots about the RCA outputs? - Its means SFA to them.
With lower level head units have a similar quality in sound, you should be making sure it has the features you desire. For example, mp3, Cd text, CDR-CDRW compatibility.
Shopping for head units is definatley not a 2 stage job.
Unless your selection criterior include flashing Lights and a mute button.
Car sound, like all Audio Visual purchases need to be attacked with great preperation. If you want to be happy with your purchase in the long run, spend that little bit of time finding out exactly what you want in a unit then go out and test the examples that best suit your needs. In this area of interest everything is about personal choice; as the sense of sound is tuned differently for all of us.
Oh, and I didn't even mention the importance of the style of music you play. But thats a whole nother story.
