I can't say that I have done it on a 7M engine (mine need doing as well), but I have done it on a 18R-G and also a 265 Hemi.
You need a you beaut spring compressor (I have one from Snap-On and it is brilliant). If you have sufficient access to the springs, then you can use this. The only drama is then keeping the valves in the right position, and here is the dodgy part.
Whjat you do is get some nice NEW and clean nylon rope (that will fit through the spark plug hole), make sure the piston that you want to do is at the bottom of the bore, feed in as much rope as you can, wind the piston back up slowly by hand to close to TDC as possbile (without applying too much pressure), and this will hold the valves in place. Replace the valve stem seals, and replace the spings etc and repeat for each cylinder.
