It's a bit of a lottery. Most places don't comp check them anymore but it's certainly something you can do. I usually also check the condition of the oil filler cap and try to sneak a peak at the engine internals thru the filler hole to see if there is any oil sludge buildup. Obviously avoid those that do as it indicates a lack of servicing. Also make sure it spins over. A friend travelled to another state to pick up an expensive engine from a reputable engine importer only to find it was siezed!
The freshest 7MGE will be more than 10 years old. Whilst it is out of the car I would change front and rear main oil seals and also the timing belt.
As I am sure you are aware, 7Ms are well known for being a little suspect in the head gasket department. I would tension up the head bolts as part of the the pre-fitment freshen up.
