sell the holley to buy EFI hardware...
a single H 350 is big enuf to power a 265 hemi valiant, it's too big for a 5M.
even dropping the jet size won't help you much - they're designed for big-breathing engines (like big fords and valiants 6 cyls).
if you don't like the idea of going EFI then get a factory carbi, rebuild it with a carbi kit and get a HEI kit from dick smith or Jaycar (approx $50) to improve the spark. the holley's only good for stoping the shed door slam shut on you.
also, intermitent miss with throttle steady would be spark, not fuel...
