Not a lot of help, though its quite normal for the temp to go up once you turn the car off and then come back down when you start it again. when you stop there is a lot of heat soak into the cooling system and all heats up then when you start it and it circulates and cools down again.
I had heaps of problems getting all the air out of my 4age engine, as the thermostat seemed to get air stuck behind it and it wouldn't open. Have you tried with the thermostat out?
