Im having the same problem with my zorst, its too loud, mine is 3.5" with a single straight though dynomax muffler, im thinking of putting a resonator on, dont know whether it will help or not. My car is particularly annoying cruising along at freeway speeds. Maybe take it to a zorst shop, go for a spin with the owner and see what he thinks might reduce the noise. If you are happy with the level and just want to get it over the pits, replace one of your exhaust gaskets with a restrictor.
As for your clutch, your pressure plate sounds a bit piss poor. Mine is 8.6" with a 1200kg pressure plate, organic full face plate and works a treat. I have heard alot of unfavourable comments about "RPM" brand clutches. Ohyeah my clutch is dealing with a 1700+kg car too, not 1200 or so like yours.
