Button clutches don't have to be as nasty as you think. I'm running a 5-puck ceramic clutch behind my 2JZ and it's perfectly drivable even in stop-start traffic. Not quite as smooth as an organic clutch but far from brutal.
Having said that, I originally had an organic clutch and it only slipped when I was really giving it arseholes. Your 1JZ shouldn't be enough to overwhelm a decent organic clutch, certainly not at 5psi. Go and talk to a performance clutch specialist, they will recommend something to best match your needs.
