well, i think it depends on three things.
power band of motor,
weight of car
expected top speed.
oh, and number of gears, tyre size etc.
i have a 4.3 and 4speed, so on highway 100km/hr is 4500rpm (thats ok as that my engines most efficient revs)
assuming you have a high revvign motor (7000-8000)
highway, pick ratio so rpm is at peak torque rpm.
drag racing, pick ratio so that you can reach your expected trap speed.
for circuit work, pick ratio so that you 'just' reach top speed on longest straight.
for city, 4+ 
hmm, actually i've come to the conclusion it depends on NA vs chraged... charged you may be better off staying in gear longer.. you'll lose a little off the start, but less gear changes mean staying on boost longer.
if i had a 5 speed, i'd say 4.3 for NA, and maybe 3.7 for turbo.
