simon, tee off the oil pressure sender switch like folks have suggested. if you're not keen on the brass cracking fittings speedflow (www.speedflow.com.au) make alloy fittings to suit. the hole is 1/8 NPTF FWIW.
re; water fittings, i'm using my heater hoses (as my gas convertor also uses these - i'd run a tee out of the back of the fitting that sits in the back of the head,for supply and return, well, tee into the pipe that goes along side the block back to to the water pump assy (depending on your setup)
