Its a torque mount. Have you had the mounts urethaned? Ive heard this helps with limiting the movement of the engine. I would assume that they keep coming out due to too much movement of the engine?
Im getting it done to my mr2.

Not sure if this will help but its just a thought.

Also, have you tried putting a split pin in the end of the bolt? Drill a hole in the end of the bolt and after you put the nut on put the split pin in. This will stop you from loosing the nut and bolt. could be a good safety thing anyway until you find exactly whats wrong.
