This mechanic doesn't sound too good if you ask me 
For starters - the air/fuel mixture is controlled by a closed lamba loop system (Bosch K-Jetronic?), he may have changed the fuel pressure, but that would merely result in the ECU eventually changing the duration of the injector cycle (yes, this can be a good thing)...secondly, increasing the air flow through the intake may just be him cleaning the air filter with an air compressor and I don't see how without heavy modification it could be done to a Gen 1 3S-GE.
If there is only one bolt holding the gasket on, don't expect the gasket to last too long, so just be careful how much you drive the car. If there are leaks in the exhaust manifold then I'd suggest just taking it apart (you will need to remove the alternator for this) and looking for a blown gasket somewhere.
If I were you, I would take it to a different place that specialises in EFI tuning and preferably dyno tuning as well so that they can show you the increases that they claim...also find someone who doesn't say too much and keeps it in simple - non "powah" terms (ie - cleaned your air filter, I adjusted the fuel pressure)
I would also suggest getting your injectors cleaned as well, it may set you back $150 or so, but it's well worth it - especially if the car is starting to get a bit long in the tooth.
