You are best to retrieve all documents / receipts etc of costs you've spent on your car to date. When itemised & added up together it may give some indication of what the car is worth.

Otherwise, the only guide they can go with will either be the value based on the redbook (low because it only considers stock cars) or they will get a valuer in to assess it (dunno but some probably have no clue about how much Toyota parts are worth).

As you're not at fault, I will probably demand that your car be put back to the condition it was prior to the accident, no matter what the cost will be.
