I'm with Takai - I had plenty of idle hunting issues but it takes a little patience to hunt down the air leaks.
Make sure the TPS is correctly set (all the resistances are in range).
Is your Idle control valve connected? And is it ok - are the resistances in range?
Make sure your intake is sealed, especially if it has been reversed.
You've replaced your water temp sensor which is good but have you got the air bubbles out? This will cause hunting.
And lastly, one I found almost by accident, make sure the O-ring for the dipstick seals correctly. I replaced my mine and many idle issues were resolved. I put it down to being one of the last leaks in the engine.
