The MZ series engines are more modern than the VZ engines (1994 vs 1987), so that's a good indication right there. The biggest thing that sets them apart is the MZ is all alloy, while the VZ has a cast iron block, so obviously there's a big difference in overall weight. I've heard many horror stories about the reliability (or lack thereof) of the old VZ engines, but apparently the MZ is a vast improvement.
As for the tinkering aspect, I don't know of anyone who's put serious effort into modifying either of these engines so I can't say anything for sure, but the newer engines have more power and a better spread of torque from the factory floor, so chances are it's a better place to start if you want to tinker.
