You could even need a new water pump. Mine was doing that at one stage, one thing that i found was that the inside of the water pump was corroded so i'd say the water wasn't circulating properly. Make sure that all the hose connections are tight. What condition are the hoses? What condition is the radiator cap? If its old and/or worn out it wont hold the pressure and the motor will overheat. You could even have a blockage in the motor its self. Timing and oil have a bearing on the water temp as well. One tip that you could try is if the temp starts to climb up to much is to turn the in cabin fan up high and the climate control up to full heat. It acts as a second radiator.
