Stainless "may" be used as part of a multi layer steel (MLS) head gasket... Nobody seems to say what steel they use in an MLS gasket though so it could be any sort of steel.
I doubt very much that stainless would work well as a solid 2mm head gasket like you have described though due to the points I already raised.
