Well in the case of the 7M, which is plagued by problems from the factory, a good head gasket replacement (where nothing else is wrong) with a factory gasket and proper torque values, causes the problem to basically go away.
If you wanted to go the composite metal head gasket for peace of mind, it'd be a lot less stuffing around than a copper one. A composite metal head gasket is what the JZ engines use from the factory and they have no issues with blowing head gaskets.
