if they're anything like real SU carbs, go to your local library and find a copy of Des Hammil's "How to build and powertune SU carburettors". Is good book. His other books seem pretty good, too. Worth a read.
I've got it on loan from my library currently... preparing to bolt on a pair of SU HS4s on my 3K motor.
The major issue with SU carbs is getting the needle profile right. I would really hope that these mechanics haven't reprofiled the needles, as doing so is irreversible; it involves removing tiny amounts of metal from particular areas along the needle shaft.
If the needles have indeed been fiddled with, you'll need to try to find an original set, or at least find out what the specifications were. Good bloody luck, I say.
Typically, all SU carbs of a given model have the same jet, at least from the factory. They may have been changed, of course.
"SD Car Tuning" in Braddon, Canberra are a carby specialist, and can get a huge variety of carbs and carb bits, including SU. You might want to give them a call.
