Hornsby is another 20 minutes up the Pacific Hwy from North Syd, I'm sure you have someone that could do it locally. Just ring an auto elec and ask around. My mechanic put me on to the bloke I used.
Took 40 minutes to do the conversion, regass and test. Has worked like a charm since, I'm loving it on these hot days.
I'm sure someone more knowledgeable than I will post all the definate info, maybe even names of the Gas's I think it's R12 or something....anyway all guesswork

You're almost there...the "evil" gases(which work a hell of a lot better than the so called environmentally friendly ones) contained CFC's(chloroflurocarbons)
You can buy gas with CFC's but it will be crappy recycled stuff and cost you an arm and a leg compared to the new shit.
A conversion doesnt consist of much really. Reclaim the old stuff, change the oil in the compressor(after flushing the system to get all the old crap out), leak test, vacuum out and then regas and change the shrader valves to slightly smaller ones. Thats done properly. I doubt most places will leak test or flush the system....and some dont change the shraders.
The old stuff is R12, bloody good gas.
The new is R134a, its not that bad but is less efficiant than 12.
Be careful if you havnt been using your AC much as the seals might be dry and as soon as you pressurize the system again it'll blow the old dried up seals(as happend with my shaft seal which i've still got to get around to replaceing)
As a rule of thumb, run your AC for atleast 5 minutes a week, even in winter. Alot of cars are now coming with a switch that turns the compressor on when the car is in reverse(run off the reverse lights)
