Gee. I can't say I have ever seen a modified or even for that matter a tidy RT84.

I like your plans, the 1600 is one of the nicest looking cars of the era.

I reckon a 1GGTE would be the go for motivation though. I'm sure you'll be able to find a Hilux diff that will give you the strength and the stud pattern you're after. Do you know the width of your current diff that will help figure out what model of hilux to go for.
