Gentoo. It's source-only so everything has to be compiled.
But it's very easy to install new software... To install X (and EVERYTHING it requires), you type:
emerge xfree
And that's it!
Installation is a back to basics one though. Not a very easy distro to install.
Red Hat is good if you're lazy 'coz it's just so easy to install.
I've heard good things about Debian, but I've never tried it.
