After looking at some of the pictures and checking out "their process" I'd say it wouldn't be too hard to keep the parts around the gauges black.
From their process description they spray a base coat and then dip the thing through a mask of sorts and then spray it with 2 pack.
I assume the mask would be some form of very thin clear plastic that sticks to the piece and they can probably cut it whilst its still wet.
