if you restored the car to factory original then it might improve in value - but i think that once you substantially mod (and hence personalise) the car, it's value is only of significance to you.
am not knocking your own project - but the dollar value of collector's cars is the rareness of their pristine state, not the value of modifications.
however, if you spend the time/money on it for personal pleasure, then you will enjoy the 10+ years you expect the car to last for - and it's going to be of greater 'value' to you than an insurance valuation.
