rsa and rcg is the only items required by law.
if you want to work as a barrista tafe run short courses that might help you get a job.
also most small cafes and things like pastry shops might be a good place to start untill you lern how to make good coffee.
theres always plenty of barwork around,look in the paper. experiment with diffrent drinks when you go out so you are aware of the products and labels you will be serving.
if you cant find anything local try working as a glassie or bar usefull for awhile!
