If you have all of the necessary parts, it's piss-easy. I did it a few years back, and back then I'd never touched an EFI car before.
You won't get any more peak power with EFI (unless your original carbies were stuffed and/or out of tune), but you will notice a much fatter torque curve from idle to redline - and that's just as important as peak power for a street-driven car. Fuel consumption is heaps better as well!
