Yes, fuel does go 'off'. The shorter chain fractions-or volatiles-evaporate into the atmosphere leaving you with a fuel mix that is difficult to light (comparitively anyway) and has a slower burn rate.
HOWEVER, as it's been in a non-vented can, it'll be fine.
The sort of fuel to be wary of is (for example) premium fuel at a small out-of-the-way servo where it sits in the tank for months before you buy it.......
