permatex 3 or loctite 3, aviation sealant. that's the brown goo Foo was talking about. good stuff, and it's non-hardening so 9 times out of 10 you can re-use the gasket again. i also use this on tappet cover gaskets, fuel pumps, main seals in fact pretty much anything that isn't the sump or exhaust. for those, i use silicon sealant, black stuff for my car, blue if your car has 02 sensors
for a head gasket that requires sealant, use hylomar. if it doesn't (graphite gasket) bolt it on 
always clean the mating faces with thinners before applying goo
