draven, there are two things that bring a pad back from the disc when you let off the brake. first and formost is disc runnout. brand new and perfectly straight discs have enough runnout to push the pads back just enough so they dont rub.
secondly is the rubber seal in the caliper which seals the piston. it is slightly offset and deformed when the brake is applied, so when you let off the brake as it reforms it pulls the piston back.
